Healthy Coconut Flour Brownies 

This coconut flour brownie recipe is ideal for anyone who is looking to keep desert in their diet while still trying to eat healthy. 

When trying to eat healthily, a major obstacle is often desert. It can seem like an aspect of your diet that you just cannot rid yourself of at times. Luckily there are ways to enjoy the desert and still follow a healthier diet. It just takes a few substitutions. This coconut flour brownie is an example of that. It is gluten-free, dairy-free, and has lower calories than your typical brownie. 

Ingredients

  • 7 eggs
  • ½ cup of coconut oil 
  • ½ cup of cocoa powder 
  • 1 cup of sugar (you can get creative with the type of sugar) 
  • ½ teaspoon of salt 
  • ½ cup of coconut flour 
  • ½ teaspoon of vanilla extract 
  • 1 tablespoon of semisweet chocolate chips

Instructions

1. Oil up a baking dish and preheat the oven to 350 degrees Fahrenheit

2. Pour coconut oil and cocoa powder into a saucepan and stir them together. Do this until the oil has completely melted into the cocoa powder. Do this over low heat for about 5 minutes

3. Get a bowl and mix eggs, sugar, salt, and vanilla extract. Combine this mixture with the previous cocoa powder mixture.

4. Pour coconut flour into the new mixture and stir.

5. Pour the final batter into a baking dish and sprinkle chocolate chips on top (how many chocolate chips is your choice).

6. Place in preheated oven. This should take about 35-45 minutes.
